About al FreshCo

al FreshCo has been in the making, in some ways, for years, as it builds off of the many experiences Laurel, the owner, has had farming, researching food access, and working in global commodity trade. The idea of the meal kits came together when she found herself prepping meals for a pregnant friend, who she feared otherwise wouldn’t eat her vegetables. The prepping left her friend no excuses; all she had to do was throw it in a pan, heat this, sauté that; and so began al FreshCo! Laurel started selling kits in Ireland, where she was working on a small vegetable farm. It turned out to be a great growing season, and the farmer found herself scrambling to find alternative markets outside her CSA demand. Laurel began using this excess to make her first meal kits, and was thus able to give the farmer an alternative and flexible outlet for her excess crop, and also was able to get a broader range of people eating fresh vegetables. Boston, for Laurel, is home. Since February of this year al FreshCo has been operating in Jamaica Plain. Connecting produce grown by responsible local farmers with her community members, to enable families and friends to come together around hearty, healthy meals, motivates Laurel’s hopes to reach more people with the kits.
